    How Overseas Grocery saved my Dinner Party

    Recently enough, I had invited a friend over for dinner on a week-night. As can be expected, I was late coming home. I spent most of my available time making eggplant parmigiana. After which, I realized that I had no dessert. It was one of those rare minutes where I had very little fresh fruit (and everyone was hungry.) Luckily, I had just been to the Overseas Grocer. How did my visit to the Russian Market save my dinner party?

    Crumbles are the easiest of desserts short of plain cut fruit. I did have a jar of whole cherry preserves from my trip to the Overseas Grocer and a bag of frozen red currants. These became the centerpiece of a delicious crumble. I took two fresh peaches (sliced), ½ cup frozen red currant, 3 tablespoons of cherry preserves, cinnamon and a splash of amaretto. The fruit goes into a small casserole. As there was a lot of sugar in the cherry preserves, I didn't add any sugar to the fruit, but that is up to your taste. In a separate bowl, I combined approximately ¾ cup oats, 3 T brown sugar, 3 T flour and a splash olive oil. This topping should be placed on the fruit loosely. Resist the urge to pack it down. Top with 2 T of butter in small dabs. Bake at 375 until bubbly. Top with ice cream.
